Tagliatelle con Cacio e Burro
A simple and classic recipe, this recipe should only take around 15 mins to make from start to finish and it is full of flavour!
Fun fact: this traditional Italian dish inspired Pasta Alfredo – a very famous and popular Italian American dish which is full of cheese!

Ingredients
(Serves 2)
-200g tagliatelle/spaghetti
-30g salted, high quality butter
-A large handful of grated, aged Parmesan (about 30g)
– Sea salt add black pepper
– Extra virgin olive oil
Method
1. Cook the pasta until almost al dente in boiling, salted water.
2. Add a drizzle of olive oil to a warm frying pan and use a pair kitchen tongues to add the pasta directly into the frying pan. Don’t worry about draining the pasta as we need the pasta water to form the base of the sauce!
3. Add in a ladle of the pasta cooking water to the pasta to continue cooking it.
4. Then add in the butter and cheese and stir, coating all of the pasta.
5. Continue cooking until the water has mixed in with the cheese and butter to form a sauce and until the pasta is al dente, adding more pasta water if necessary to get a nice smooth consistency.
6. Add in lots of black pepper and a pinch of sea salt to taste.
7. Serve and enjoy! 😋
